Recipes: Grill Your Pork Souvlaki With Pita or Rice

If you’ve never had pork souvlaki that’s been prepared on a grill, it’s time you tried it. There are a variety of side dishes that all hit the right notes. Souvlaki can be combined with pita and tzatziki sauce, or with lemon rice, or a Greek salad. Better yet, why not try them all?

Pork Souvlaki Ingredients:

Pork souvlaki

  • 10 wooden skewers (soaked in water to prevent burning)
  • 3 pounds cut into 1″ cubes of pork shoulder
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 tsp. dried Greek oregano
  • 1 tsp. dried thyme
  • 1/2 tsp. smoked sweet paprika
  • 1/2 tsp. cumin
  • 2 tbsp. salt
  • 1 tsp. black pepper
  • 1 tsp. dried oregano

Instructions:

Combine all ingredients but the pork for the marinade. Add the cubed pork and refrigerate for 2 to 4 hours.

Preheat your barbecue for direct medium heat. If you’re using a gas barbecue, turn all its burners to high for 15 minutes. Then lower the heat on the burners to medium.

Put the pork on skewers and place them over direct medium heat until browned, about 4 minutes. Turn the skewer so all meat gets cooked evenly, another 4 minutes per side. This should take about 16 minutes.

Let the skewers rest for 10 minutes. Serve with lemon wedges, pita and tzatziki. Or combine souvlaki with tomatoes and peppers that have been roasted over high heat, with yogurt seasoned with cumin, lemon zest, salt and pepper.

Tzatziki Sauce:

  • 1 cucumber
  • 2 cloves of garlic, minced
  • 1/4 cup extra virgin olive oil
  • 18 oz. strained yogurt
  • 2 tbsp. red wine vinegar
  • Salt

Mix the olive oil and garlic in a blender. Take the skin off the cucumber and remove the seeds. Grate cucumber, then wrap it in a towel and squeeze to get rid of the excess moisture.

Combine cucumber, garlic and oil, yogurt, 1-2 tbsps. of red wine vinegar and a pinch of salt. Blend. Refrigerate tzatziki sauce.

Pita:

Brush pita with oil. Sprinkle with oregano, salt and pepper. Place your pita on a greased grill at medium-high heat. Close lid. Turning once and grill until the pita is a golden color. This should take about 4 minutes.

Lemon Rice:

  • 1 tbsp. butter
  • 1 cup long grain rice
  • 1/2 tsp. salt
  • 1 tbsp. lemon juice
  • 3 cups chicken broth
  • Parsley

Melt butter in a pot. Add rice and saute. Stir the rice often. When the rice is transparent, add broth, salt and lemon juice and bring it all to a boil. Put a lid on the pot. Turn heat to low and simmer until the rice is tender. It will take about 25 minutes.

Choose your favorite combo to go with the souvlaki. Wrap a pita around it with some tomatoes, onions and tzatziki sauce. Or lay out the skewered pork alongside lemon rice.

Toss together a Greek salad of lettuce, bell peppers, cucumber, red onion, olives, tomatoes and feta cheese. A dressing of olive oil, lemon juice, oregano and black pepper will give it added zest.
